Different processing methods of tea leaves involve variable degrees of oxidation yielding different types of tea (green, oolong, or black tea). In 2014, Americans consumed 3.6 billion gallons of tea, of which 84% was black tea, 15% was green tea, and the remaining was white, oolong, and dark tea. Herbal teas are infusions of herbs or plants other than Camellia sinensis and will not be discussed in this article. Although tea contains a number of bioactive chemicals, including caffeine and fluoride, most research has focused on the potential health benefits of a class of compounds in tea known as flavonoids. In many cultures, tea is an important source of dietary flavonoids.

  • Tea is an infusion of the leaves of the Camellia sinensis plant, which is not to be confused with herbal teas.
  • All the tea types, including white, green, oolong, black, and Pu-erh tea, are produced from the leaves of the Camellia sinensis plant. Different processing methods yield the various types of tea.
  • Biologically active chemicals in tea include flavonoids, caffeine, fluoride, and theanine. Green teas are especially rich in a group of flavonoids called flavan-3-ol monomers or catechins. Black teas contain more complex chemicals — theaflavins and thearubigins — derived from catechins.
  • Observational studies in humans suggest that daily consumption of tea may be associated with a reduced risk of cardiovascular disease (CVD). Intervention studies showed that tea exhibited cholesterol-lowering, anti-inflammatory, antioxidant, and anti-hypertensive properties, which might be beneficial in the prevention of CVD.
  • Tea consumption has been associated with reduced risk of developing type 2 diabetes mellitus in large prospective cohort studies. Yet, the mechanisms behind this association are complex, possibly involving a role for tea bioactive compounds in the regulation of energy balance, lipid and glucose metabolism, insulin sensitivity, body composition, and/or body temperature.
  • Despite promising results from animal studies, current evidence does not support a role for tea consumption in the prevention of most cancers in humans.
  • It is still unclear whether tea consumption is associated with increased bone mineral density and/or reduced risk of osteoporotic fractures.
  • Limited research suggests an inverse association between tea consumption and risk of tooth cavities. The incorporation of green tea extract in mouthwashes and/or toothpastes may also help reduce dental plaque and gum inflammation in patients.
  • The pooled analysis of three large US prospective cohort studies found an 11% lower risk of kidney stones with the highest versus lowest level of tea intake. More research is needed to assess whether the oxalate content in tea may affect subjects with a history of kidney stones.
  • The mounting evidence for a role of tea consumption in the prevention of cognitive decline comes from observational studies. Clinical studies would be needed to establish whether tea or its bioactive constituents could limit cognitive decline and/or improve cognitive dysfunction in older individuals.
  • The use of green tea extracts in clinical trials was found to cause gastrointestinal disorders and liver toxicity. Tea consumption may also potentially interfere with certain medications, including the anticoagulant, warfarin, and some cardiovascular drugs.

Tea and Cancer Prevention

How might tea help prevent cancer?

tea and cancer prevention imageTea is made from the leaf of the plant Camellia sinensis. Shortly after harvesting, tea leaves begin to wilt and oxidize. During oxidation, chemicals in the leaves are broken down by enzymes, resulting in darkening of the leaves and the well-recognized aroma of tea. This oxidation process can be stopped by heating, which inactivates the enzymes. The amount of oxidation and other aspects of processing determine a tea’s type. Black tea is produced when tea leaves are wilted, bruised, rolled, and fully oxidized. In contrast, green tea is made from unwilted leaves that are not oxidized. Oolong tea is made from wilted, bruised, and partially oxidized leaves, creating an intermediate kind of tea. White tea is made from young leaves or growth buds that have undergone minimal oxidation. Dry heat or steam can be used to stop the oxidation process, and then the leaves are dried to prepare them for sale.

Tea is composed of polyphenols, alkaloids (caffeine, theophylline, and theobromine), amino acids,carbohydrates, proteins, chlorophyll, volatile organic compounds (chemicals that readily produce vapors and contribute to the odor of tea), fluoride, aluminum, minerals, and trace elements. The polyphenols, a large group of plant chemicals that includes the catechins, are thought to be responsible for the health benefits that have traditionally been attributed to tea, especially green tea. The most active and abundant catechin in green tea is epigallocatechin-3-gallate (EGCG).

Black tea contains much lower concentrations of these catechins than green tea. The extended oxidation of black tea increases the concentrations of thearubigins and theaflavins, two types of complex polyphenols. Oolong tea contains a mixture of simple polyphenols, such as catechins, and complex polyphenols. White and green tea contain similar amounts of EGCG but different amounts of other polyphenols.

Although iced and ready-to-drink teas are becoming popular worldwide, they may not have the same polyphenol content as an equal volume of brewed tea. The polyphenol concentration of any particular tea beverage depends on the type of tea, the amount used, the brew time, and the temperature. The highest polyphenol concentration is found in brewed hot tea, less in instant preparations, and lower amounts in iced and ready-to-drink teas. As the percentage of tea solids (i.e., dried tea leaves and buds) decreases, so does the polyphenol content. Ready-to-drink teas frequently have lower levels of tea solids and lower polyphenol contents because their base ingredient may not be brewed tea. The addition of other liquids, such as juice, will further dilute the tea solids. Decaffeination reduces the catechin content of teas.

Among their many biological activities, the predominant polyphenols in green tea―EGCG, EGC, ECG, and EC―and the theaflavins and thearubigins in black teas have antioxidant activity . These chemicals, especially EGCG and ECG, have substantial free radical scavenging activity and may protect cells from DNA damage caused by reactive oxygen species . Tea polyphenols have also been shown to inhibit tumor cell proliferation and induce apoptosis in laboratory and animal studies . In other laboratory and animal studies, tea catechins have been shown to inhibit angiogenesis and tumor cell invasiveness. In addition, tea polyphenols may protect against damage caused by ultraviolet (UV) B radiation, and they maymodulate immune system function. Furthermore, green teas have been shown to activate detoxification enzymes, such as glutathione S-transferase and quinone reductase, that may help protect against tumor development. Although many of the potential beneficial effects of tea have been attributed to the strong antioxidant activity of tea polyphenols, the precise mechanism by which tea might help prevent cancer has not been established.

Tea has long been regarded as an aid to good health, and many believe it can help reduce the risk of cancer. Most studies of tea and cancer prevention have focused on green tea. Although tea and/or tea polyphenols have been found in animal studies to inhibit tumorigenesis at different organ sites, including the skin, lung, oral cavity, esophagus, stomach, small intestine, colon, liver, pancreas, and mammary gland, the results of human studies—both epidemiologic and clinical studies—have been inconclusive.

The best way to enjoy tea (especially GLF White Tea) is in its natural state. To experience the flavor and absorb the incredible health benefits, leave out the extra additives and let the leaves do their magic. Adding milk reduces the health benefits because milk proteins bind with the polyphenols. The precious antioxidant content is reduced even more with low-fat milk.

So why does anyone put milk in tea? Green and black teas have a short shelf life of 1 to 2 years. After that they lose flavor and health benefits. The tea becomes less tasty; therefore people will add milk, sugar, honey, flowers or herbs to bring it back to a state of enjoyment. Also, brewing tea too long will cause it to become bitter. Inserting some additives will cover up the bitterness. This also turns a very healthy beverage into a calorie-filled cup of potential weight gain. If a person really needs to add something, use a citrus fruit such as lemon, oranges, or grapefruit. This method will increase the polyphenol content and add some good ol’ vitamin C.

Green Tea Health Dangers

Worst Reporting EVER!

Because, it’s not true.  The story has gone viral, but the reporting is the most inaccurate nonsense we’ve ever seen.

green tea health dangers image“A young woman has contracted hepatitis after drinking three cups of Chinese green tea per day… They [doctors] are now trying to raise awareness of the hidden dangers of green tea – particularly tea containing Camellia sinensis – as this has been linked to hepatitis in the past.

That’s where the story falls dangerously to the ground.  Anyone who knows tea, knows that camellia sinensis IS the tea plant, NOT an ingredient IN tea. Unfortunately, news outlets are repeating this story at an alarming rate without any fact-checking.  A further read of the story reveals that the green tea this young woman was drinking contained a number of additives for weight loss.  She was drinking 3 cups a day to lose weight.  Normally, 3 cups of green tea a day is harmless to most people.  Millions of tea drinkers in the USA alone have proven this over the centuries.  And while drinking green tea all day every day might cause a problem, so would drinking too much water.  The danger is not the tea in this case, it’s the added ingredients that should have been the focus of this report.

As a journalist, I am appalled at the irresponsible media that spreads such bogus information.  Shame on you ABC News.  Shame on you Huffington Post.  Shame on all who re-post this incomplete story.  While the original BMJ report makes the mistake of calling camellia sinensis an additive to the tea, it does make one statement that has been ignored by the media:  We acknowledge that green tea is predominantly a very safe and healthy drink, with antioxidant properties. It is the secondary or tertiary processed products, rather than the freshly made leaves, that have been described in previous case reports. This raises the possibility that it is the addition of other chemicals causing hepatotoxicity, particularly in preparations used for weight loss. Also, pesticides may be widely used during the growing of tea trees and are known to contaminate green tea infusions.

Be sure the label lists only one ingredient:  TEA.

5000 amazing uses for tea leavesIn this age of “waste not, want not” we are always looking for ways to use things completely before they end up in the trash.  Tea is no exception.  In fact, used tea leaves have more value than many things we toss in the landfills.  An extensive search of the Internet reveals thousands of blogs telling us what we can do with these seemingly worn-out jewels.  Maybe there aren’t 5,000 uses, but there’s enough to squeeze out every last morsel of these life-giving by-products.

Tea is green in many ways.  Besides the obvious use as the world’s second most popular drink (water being number one), tea drinkers can be the most ecologically-minded people on the planet.  Let’s take a look at some of the clever ways we can re-purpose and even save money (to buy more tea, of course!) around the house.

Clean mirrors and windows: Tea can remove stubborn, greasy fingerprints from glass, and make it sparkle. Simply rub a damp teabag on the glass or fill a spray bottle with brewed tea.

Prevent fleas: Tea is also rumored to help prevent fleas, so sprinkle some dry used tea leaves around pet bedding.

Dye hair: Brewed tea also is a good natural hair dye. Mix rosemary and sage into dark black tea and let the mixture stand overnight. Strain the mix and thoroughly work it into your hair. Repeat as needed for the desired color.
Repel mosquitoes: Burning tea leaves is said to repel mosquitoes with none of the side effects of chemical bug sprays.

Use as incense: Use either a Japanese tea-leaf-burner (cha kouro) or an old skillet on the stove with low heat to roast the used leaves and get them smoking slightly. Not only does this smoke have a nice aroma, it is also very effective in absorbing and eliminating bad odors in your house.
Soothe sunburned skin: Wrap used, damp tea leaves in a cloth and press or gently rub on sunburned skin. The tannic acid in tea has a cooling effect and helps repair the skin.
Prevent rust in cast-iron kitchenware: Rub your cast-iron pans, pots or teapots (tetsubin) with used tea leaves. The antioxidants in tea react with iron and form a protective film that prevents the formation of rust.

Searching Google for “uses for tea leaves” returns 5,460,000 results.  Surely you can find 5,000 uses for those tea leaves.  Now, pardon me while I do further research on dyeing gray hair.

Hundreds of websites are touting the supposed health benefits of Matcha.  They hype claims of “137 times the ECGC of other green teas.”  Don’t you believe it!  That nonsense comes from one study done by…drumroll please… Starbucks, which happens to sell their Tazo brand Matcha tea.  The USDA has a more scientific approach.  Basically it says that the average level of antioxidants in green tea is about 80-mg per cup.  That would mean that Matcha has 10,960-mg.  Not only is this an exaggeration, if it were true (which it isn’t), that high level would actually be dangerous.  A Chemical Research and Toxicology report found that drinking more than 750-mg can make people nauseous, and higher levels can cause liver toxicity and other health issues.  Matcha is made by grinding the whole tea leaf into a fine powder.  As soon as the leaf is ground, the antioxidants begin to dissipate, and within 3 months the levels are virtually non-existent.  This is why whole leaf tea is a far better choice than tea found in the typical tea bag.  The antioxidants remain in the leaf, and begin to be released once the dry leaves are broken.  So the actual fact is, Matcha Tea has no more antioxidants than other teas from the camellia sinensis plant.  By the time it makes it to your kitchen, maybe it has less!  The strong taste of Matcha encourages the addition of milk and/or sugar.  Those additives coat the stomach lining causing a reduction in the absorption of antioxidants.

Speaking of health, there’s an even bigger danger lurking.  All teas contain lead which is absorbed from the ground.  Matcha contains 2.5-mcg to 7-mcg of lead, which the USDA labels as unsafe.  Since Matcha is created by grinding the whole leaf, the full strength of the lead is ingested when you drink it. Regular whole leaf tea is well within the recommended 2-mcg of lead USDA guideline because 90% of the lead remains in the leaf when brewed.  In a similar vein, the caffeine content of Matcha is very high.  That might make a nice pick-me-up in the afternoon…but is it worth the risks? Only drink Matcha that is 100% USDA certified organic.
